What is your opinion on whether or not to keep butter in the fridge? We only use organic butter and I would like to keep it out on the counter. I did buy a "butter keeper" but know I will never use it! Is it okay to keep butter at room temperature? Thanks :)
Butter has naturally occurring anti-microbial activity and so is usually just fine when left out of the fridge. Use a clean knife every time you use it and try not to contaminate it with pieces of food - such as bread crumbs (and especially meat). This can rot and possibly cause you to be ill.
My recipe for a "better butter" is to mix equal parts of butter with a plant source omega-3 oil (such as flax, echium, or ahiflower) and store in the fridge. This is even healthier and is much more spreadable than regular butter.
